Breakfast for Dinner – Egg Tacos

Lots of fresh ingredients straight from the farmers market on Saturday turns Monday night into a super quick dinner.

Breakfast Tacos

  • 4 Whole Wheat Tortilla Shells
  • 4 Ramps
  • 6 Large Eggs (organic)
  • 6 oz Shredded Pepper Jack Cheese
  • 8 Cherry Tomatoes
  • 2 Large Radishes
  • 4 (Fresh) Ramp Greens
  • Salt & Pepper to Taste

Serves Two

This is a quick cooking dish. Be sure to prep all the ingredients prior starting to cook the eggs.

Crack eggs. Do not scramble. Set aside.

Chop ramps, shred cheese, slice radishes, chiffonade ramp greens, slice cherry tomatoes.

Ingredient Prep

Heat sauté pan add a bit of ghee. When ready, add chopped ramps (not greens) a few dashes of pepper. Gently sauté until tender. Add eggs. gently run your spatula through yolk to break. Goal is to not over scramble you want a good mix of whites and yolks. (Think of it as a messy over hard cooked egg). I’m not a huge fan of scrambled eggs so I enjoy mine this way.

Just before the eggs are done, heat tortilla shells in microwave for about 30 seconds for two  about 45 for four. Assemble: eggs, cheese, tomatoes, greens, radishes, more salt & pepper and serve immediately.

If your a hot sauce person go for it. .. or maybe some homemade salsa verde.  This simple dish can be topped soooo many different ways.
