So I found myself a “bachelorette” for a week while the husband was away at a conference.
On the last night of dinner-for-one, I looked in the pantry and decided the cute purple box of Annie’s shells & white cheddar macaroni and cheese was calling my name.
However, that was just the beginning of my little dinner-for-one adventure….
What can I do that’s quick and simple to jazz it up a bit and make a “real meal” of it.
I know! I have fresh broccoli from Saturday’s farmers market. Cut that up into small little florets. Toss broccoli in the boiling water towards the end of cooking the noodles. Nice – no more pans needed. Follow box directions. Make cheese sauce with real butter and milk, add drained shells and broccoli. Stir until combined. Plate (or bowl). Top with a sprinkle of finely shredded sharp cheddar add a sprinkle of fresh bacon crumbles. Yup I had a few extra slices of bacon in a baggie in the fridge from the other day I made bacon**. Some cracked black pepper and dinner is SERVED!
**Bacon here’s a tip anytime you cook bacon be sure to save the leftovers. Yes instead of eating that last two or three slices. Put them in a baggie in the fridge or freezer. So the next time you need a slice or two you don’t have to cook it – its already done. Also way more tasty than the stuff in the bag or can on the supermarket shelf.
